Method
Crostini Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Bread
Slice the sourdough bread into 1/2 inch thick slices and arrange them on a baking sheet. Brush each slice lightly with olive oil and sprinkle with salt and pepper.
Bake the Crostini
Bake in the preheated oven for about 10-12 minutes, or until golden and crispy.

Cook the Chutney
In a saucepan, combine the chopped tomatoes, onion, brown sugar, apple cider vinegar, grated ginger, and salt. Cook over medium heat for about 20 minutes, stirring occasionally, until thickened.
Finish the Chutney
Stir in the chopped cilantro and remove from heat. Let cool slightly.
Assembly
Assemble the Crostini
Spread roasted garlic on each crostini, top with a spoonful of tomato chutney, and crumble Pt. Reyes blue cheese on top.
Serve
Arrange on a serving platter and enjoy!
