Boil the Eggs

Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan and remove it from heat. Let the eggs sit for 12 minutes.

Cool the Eggs

After 12 minutes, transfer the eggs to a bowl of ice water and let them cool for about 5 minutes to stop the cooking process.

Peel the Eggs

Once cooled, gently tap the eggs on a hard surface and peel the shells under running water to help remove them easily.

Prepare the Filling

Cut the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the yolks. Mash and mix until smooth.

Fill the Egg Whites

Spoon or pipe the yolk mixture back into the egg white halves.

Garnish and Serve

Sprinkle paprika over the filled eggs and garnish with chives or parsley if desired. Serve immediately or refrigerate until ready to serve.
