Prepare the Mussels

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove any beards.

    Sauté Shallots and Garlic

    In a large pot, heat olive oil over medium heat. Add chopped shallots and minced garlic, sauté until translucent.

    Make the Broth

    Add white wine, vegetable broth, tarragon, salt, and pepper to the pot. Bring to a simmer.

    Steam the Mussels

    Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes, or until the mussels open.

    Check Mussels

    Discard any mussels that do not open after cooking.

Make Garlic Toast

    Toast the Baguette

    Slice the baguette in half lengthwise and toast until golden brown.

    Prepare Garlic Butter

    In a small bowl, mix softened butter, minced garlic, and chopped parsley. Spread the mixture onto the toasted baguette.

    Return the garlic toast to the oven for an additional 2-3 minutes until the butter is melted and bubbly.
