Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  2. 2

    Combine Wet Ingredients

In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.

  3. 3

    Combine Mixtures

Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be slightly lumpy.

Cooking

  1. 4

    Preheat Skillet

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

  2. 5

    Cook Pancakes

Pour 1/2 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2 minutes until golden brown.

  3. 6

    Serve

Stack pancakes on a plate and top with blueberries, banana slices, or strawberries as desired. Drizzle with maple syrup before serving.
