Method

Cooking the Salmon

    Prepare the Salmon

    Pat the salmon fillets dry with paper towels. Season with salt and black pepper.

    Pan Roast the Salmon

    In a large skillet, heat olive oil over medium-high heat. Place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until cooked through. Remove from heat and set aside.

Cooking the Buttered Asparagus

    Prepare the Asparagus

    Trim the tough ends of the asparagus. In the same skillet, melt butter over medium heat. Add the asparagus and season with salt and pepper. Cook for about 5-7 minutes until tender.

Cooking the Parsley Potatoes

    Boil the Potatoes

    In a pot, cover baby potatoes with water and add salt. Bring to a boil and cook for 15-20 minutes until tender. Drain and return to the pot.

    Add Butter and Parsley

    Add butter and chopped parsley to the potatoes. Toss to combine and season with salt.

Making the Lemon-Caper Aioli

    Combine Ingredients

    In a bowl, mix together mayonnaise, lemon juice, capers, minced garlic, and salt. Stir until well combined.
