Method

Make the Ravioli Dough

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling

    Combine Filling Ingredients

    In a bowl, mix together cooked lobster meat, ricotta cheese, lemon zest, salt, and pepper until well combined.

Roll Out the Dough

    Roll the Dough

    Divide the dough into quarters. Roll out each piece thinly using a pasta machine or rolling pin. Cut into squares or circles.

Assemble the Ravioli

    Fill the Ravioli

    Place a small spoonful of filling in the center of each dough square. Moisten the edges with water, fold over, and press to seal. Repeat until all dough and filling are used.

Cook the Ravioli

    Boil the Ravioli

    Bring a pot of salted water to a boil. Cook the ravioli for about 3-4 minutes, or until they float to the top. Remove and drain.

Make the Sautéed Spinach

    Sauté Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add spinach and cook until wilted. Season with salt and pepper.

Prepare the Lobster Saffron Cream Sauce

    In a saucepan, sauté shallots until translucent. Add lobster stock and reduce slightly. Stir in heavy cream and saffron, simmering until thickened. Season with salt and pepper.

Serve

    On each plate, layer sautéed spinach, top with lobster ravioli, and drizzle with lobster saffron cream sauce. Enjoy!
