Prepare the Ingredients
Slice the smoked chicken apple sausage into thin rounds. Chop the green onions, separating the green tops from the white bottoms.

Cook the Sausage
In a non-stick skillet, melt the butter over medium heat. Add the sliced sausage and cook for 3-4 minutes until browned.

Add Green Onions
Add the white parts of the green onions to the skillet and cook for another 1-2 minutes until softened.

Add Cheese
Sprinkle the cheddar cheese evenly over the top of the eggs. Cook for 3-4 minutes until the edges start to set.

Finish Cooking
Using a spatula, gently lift the edges of the omelet and allow any uncooked egg to flow to the edges. Once the omelet is mostly set, fold it in half and let it cook for another minute.

Serve
Carefully slide the omelet onto a plate, garnish with the green tops of the green onions, and serve immediately.
