Prepare the Ingredients
Dice the bell pepper, onion, and ham, and shred the cheddar cheese. Set aside.

Cook the Vegetables and Ham
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell pepper and onion, and sauté for 3-4 minutes until softened. Add the diced ham and cook for another 2 minutes until heated through. Remove the mixture from the skillet and set aside.

Cook the Omelet
In the same skillet, add the remaining tablespoon of butter and let it melt over medium heat. Pour in the whisked eggs, tilting the skillet to spread them evenly. Cook for about 2-3 minutes until the edges start to set.

Add Filling
Once the eggs are mostly set, evenly distribute the sautéed vegetable and ham mixture over one half of the omelet, then sprinkle the shredded cheddar cheese on top.

Fold and Serve
Carefully fold the omelet in half over the filling and let it cook for another minute until the cheese melts. Slide the omelet onto a plate and serve immediately.
