Make the Sherry Cream Sauce
In a small saucepan, combine the heavy cream and sherry over medium heat. Bring to a simmer and cook for about 5 minutes, stirring frequently until slightly thickened. Season with salt and pepper to taste. Remove from heat and keep warm.

Prepare the Omelet
In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. In a non-stick skillet, melt the butter over medium heat. Pour the egg mixture into the skillet and cook until the edges begin to set, about 2-3 minutes.

Fold and Serve
Carefully fold the omelet in half over the filling. Slide it onto a plate and drizzle with the warm sherry cream sauce. Garnish with additional chives if desired.
