Cooking Instructions
- 1
Marinate the Chicken
In a large bowl, combine buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- 2
Prepare the Breading
In a shallow dish, mix together the flour, cayenne pepper, paprika, salt, and black pepper.
- 3
Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Fry the chicken in batches for about 6-8 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain.
- 4
Make the Spicy Glaze
In a saucepan, combine the hot sauce and a tablespoon of the frying oil. Heat over medium heat until warmed through.
- 5
Assemble the Sandwich
Spread mayonnaise on the bottom half of each burger bun. Place a lettuce leaf, fried chicken, a slice of tomato, house-made pickles, and drizzle with spicy glaze. Top with the other half of the bun.
