Instructions

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and press the mixture into the bottom of a 9-inch springform pan.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, then remove and let it cool while you prepare the filling.

  3. 3

    Make the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and beat until combined. Add the vanilla extract, sour cream, and eggs one at a time, mixing well after each addition.

  4. 4

    Bake the Cheesecake

Pour the filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the center is set and slightly jiggles. Turn off the oven and let the cheesecake cool inside for an hour.

  5. 5

    Prepare the Strawberry Topping

In a bowl, combine the sliced strawberries, sugar, and lemon juice. Let it sit for about 10 minutes to allow the strawberries to release their juices.

  6. 6

    Chill and Serve

Once the cheesecake has cooled, refrigerate for at least 4 hours or overnight. Before serving, top with the strawberry mixture.
