Ceviche Preparation

    Prepare the Fish

    Cut the red fish into small, bite-sized cubes and place them in a mixing bowl.

    Make the Marinade

    In a separate bowl, mix the green curry paste, lime juice, and local honey until well combined.

    Marinate the Fish

    Pour the marinade over the fish, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the fish to 'cook' in the lime juice.

    Prepare the Lobster

    While the fish is marinating, dice the cooked Maine lobster and set aside.

    Char the Citrus

    In a skillet over medium heat, char the citrus slices (oranges and limes) until they have grill marks. Then, juice the charred citrus and reduce by simmering it in a saucepan until thickened. Set aside to cool.

    Combine Ingredients

    Once the fish has marinated, add the chopped red onion and diced lobster to the bowl. Mix gently to combine.

    Spoon the ceviche mixture onto blue corn tortillas, garnish with salted pepitas and micro cilantro, and drizzle with the charred citrus reduction.
