Limoncello Preparation

    In a large glass jar, combine the lemon zest and grain alcohol. Seal the jar tightly and let it sit in a cool, dark place for about 7 to 10 days, shaking gently every few days.

    After the infusion period, prepare a simple syrup by combining the water and granulated sugar in a saucepan. Heat over medium heat, stirring until the sugar is fully dissolved. Let it cool completely.

    Once the simple syrup is cool, strain the lemon zest from the alcohol mixture using a fine mesh strainer. Discard the zest and add the strained alcohol to the simple syrup. Stir well to combine.
