Fried NC Catfish and Shell Pea Succotash Directions

Prepare the Catfish
In a mixing bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper. Dip catfish fillets in buttermilk and then coat them with the cornmeal mixture.

Fry the Catfish
Heat vegetable oil in a large skillet over medium-high heat. Fry the coated catfish for about 5-6 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Bacon
In a separate skillet, cook the bacon until crispy. Remove the bacon and crumble it. Reserve the bacon grease.

Make the Succotash
In the bacon grease, sauté the green shell peas, fresh corn, red bell pepper, and poblano pepper over medium heat for about 5-7 minutes until tender. Add cherry tomatoes and crumbled bacon, cooking for an additional 2 minutes.

Prepare the Green Tomato Relish
Dice the green tomatoes and mix with a pinch of salt and pepper to taste. Set aside.

Serve the fried catfish hot with the shell pea succotash, green tomato relish, and tartar sauce on the side.
