Prepare the Shrimp
In a bowl, combine buttermilk and half of the Cajun seasoning. Add the shrimp and let marinate for at least 30 minutes.

Make the Coating
In a separate bowl, mix together the flour, cornmeal, remaining Cajun seasoning, salt, and black pepper.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Remove shrimp from buttermilk, allowing excess to drip off. Dredge shrimp in the flour mixture and carefully add to the hot oil. Fry in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Po' Boys
Slice the French bread or hoagie rolls lengthwise. Spread Cajun remoulade on each side. Layer with fried shrimp, sliced tomatoes, house-made pickles, and shredded romaine lettuce.

Serve immediately while the shrimp are hot and crispy.
