Preparation Steps

  1. 1

    Prepare the Garlic Mascarpone Mash

Peel and chop the potatoes into quarters. Boil them in salted water for about 15-20 minutes or until tender. Drain and return to the pot. Mix in mascarpone cheese, minced garlic, salt, and black pepper. Mash until smooth and creamy.

  2. 2

    Cook the Chicken

Season the chicken breasts with salt and black pepper. In a skillet over medium heat, heat olive oil and sear the chicken until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.

  3. 3

    Prepare the Mushroom Sauce

In the same skillet, add sliced cremini mushrooms and sauté until browned. Pour in the Marsala wine, scraping the bottom of the pan to deglaze. Let it simmer for about 5 minutes until slightly reduced.

  4. 4

    Combine Chicken and Sauce

Return the chicken to the skillet, cover, and cook for an additional 5-10 minutes until the chicken is cooked through and the sauce thickens.

  5. 5

    Grill the Asparagus

While the chicken is cooking, toss the asparagus with olive oil, salt, and pepper. Grill on medium heat for about 5-7 minutes until tender and slightly charred.

  6. 6

    Serve

Plate the garlic mascarpone mash, top with the chicken and Marsala sauce, and serve with grilled asparagus on the side.
