Prepare the crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined and press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the crust
Bake the crust in the preheated oven for about 10 minutes, until lightly golden. Remove from the oven and let it cool while preparing the filling.

Make the filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the remaining 1/2 cup of granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth.

Add eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust. Bake in the oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

Cool and chill
Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.

Before serving, top the cheesecake with sliced fresh strawberries. Slice and enjoy your delicious cheesecake!
