    Prepare the Garlic Mascarpone Mash

    Boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot. Add minced garlic, mascarpone cheese, salt, and pepper. Mash until smooth and creamy.

    Make the Poblano Creamed Corn

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced poblano peppers and cook until softened, about 5 minutes. Stir in sweet corn and cook for another 5 minutes. Add butter and season with salt and pepper. Stir until creamy and combined.

    Sauté the French Green Beans

    In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the French green beans and sauté for about 5-7 minutes, or until bright green and tender-crisp. Season with salt and pepper.

    Cook the Atlantic Salmon

    Season the salmon fillets with salt and pepper. In a large skillet, heat butter over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes on each side or until cooked through and golden brown.

    Plate the garlic mascarpone mash, top with the cooked salmon, and serve with poblano creamed corn and sautéed French green beans. Garnish with sliced almonds.
