Preparation

1

Cook the Bacon

In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

2

Sauté the Vegetables

In the same pot with the bacon fat, add the diced onion and celery. Sauté until the onion is translucent, about 5 minutes.

3

Add Potatoes and Clam Juice

Add the diced potatoes to the pot and pour in the clam juice. Bring to a simmer and cook until the potatoes are fork-tender, about 15 minutes.

4

Incorporate Clams and Seasonings

Stir in the chopped clams, dried thyme, bay leaf, salt, black pepper, and paprika. Let simmer for an additional 5 minutes.

5

Add Cream and Butter

Reduce heat to low and add the heavy cream and butter. Stir until the butter is melted and the chowder is heated through.

6

Finish and Serve

Adjust seasoning to taste with more salt and pepper if needed. Remove the bay leaf before serving. Serve hot, garnished with crispy bacon if desired.
