    Prepare the Marinade

    In a bowl, mix together the soy sauce, mirin, brown sugar, ginger, garlic, and sesame oil to create the teriyaki marinade.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.

    Cook the Chicken

    Preheat your grill or skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and cook for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 75°C (165°F).

    Prepare the Sauce

    In a small saucepan, bring the reserved marinade to a boil and simmer for about 5 minutes until slightly thickened.

    Serve

    Slice the chicken and drizzle the thickened teriyaki sauce over it. Garnish with chopped green onions. Serve with salad, miso soup, and white rice.
