Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm sushi rice. Allow the rice to cool to room temperature.

Prepare Fillings

Slice the avocado and cucumber into thin strips. If using real crab, shred it into bite-sized pieces.

Assemble the Rolls

Lay a bamboo sushi mat on a flat surface. Place a nori sheet shiny side down on the mat. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings

Arrange a line of crab meat, avocado, and cucumber along the bottom edge of the rice-covered nori.

Roll the Sushi

Using the sushi mat, carefully roll the nori away from you, pressing gently but firmly to keep the roll tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.

Serve

Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
