    Prepare the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until they are tender-crisp. Add minced garlic and cook for an additional 1 minute. Season with salt and pepper. Remove the vegetables from the skillet and set aside.

    Cook the Salmon

    In the same skillet, add the remaining tablespoon of olive oil. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

    Add the Sauce

    Once the salmon is cooked, reduce the heat to low and pour the sweet chili sauce, soy sauce, and lime juice over the salmon. Let it simmer for 2-3 minutes to heat the sauce and allow the flavors to meld.

    Serve

    Plate the sautéed mixed vegetables and top each plate with a salmon fillet. Drizzle any remaining sauce from the skillet over the salmon and garnish with chopped green onions.
