In a large pot, bring water to a boil. Add the soba noodles and cook according to package instructions, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

While the noodles are cooking, julienne the carrot and cucumber. Chop the green onions and set all the vegetables aside.

In a small pot, bring water to a boil. Add the edamame and cook for about 3-5 minutes until tender. Drain and rinse under cold water.

In a large bowl, combine the cooked soba noodles, prepared vegetables, and edamame. Toss gently to mix.
