    In a bowl, mix together the soy sauce, mirin, sugar, grated ginger, and minced garlic until the sugar is dissolved.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Cook the Salmon

    Heat the vegetable oil in a skillet over medium-high heat. Remove the salmon from the marinade (reserve the marinade for later) and place the fillets skin-side down in the skillet. Cook for about 4-5 minutes.

    Turn the salmon fillets over and pour the reserved marinade over them. Continue cooking for another 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork.
