Prepare the Chicken
In a mixing bowl, combine the chicken thighs, soy sauce, garlic, ginger, salt, and black pepper. Marinate for at least 30 minutes.

Coat the Chicken
In another bowl, whisk the egg. Dredge the marinated chicken pieces in cornstarch, then dip them in the whisked egg, and coat them again in cornstarch for extra crispiness.

Fry the Chicken
Heat the vegetable oil in a deep pan over medium heat. Once hot, carefully add the coated chicken pieces and fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Combine and Serve
Add the fried chicken to the vegetable and pineapple mixture, tossing everything together. Serve hot with your favorite sauce or as is.
