    Soak the rice noodles in hot water for about 30 minutes or until they are soft. Drain and set aside.

    Cook Tofu

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove tofu and set aside.

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

    Push the garlic to one side of the pan, crack the eggs into the pan, and scramble them until just set.
