    Prepare the Soup

    In a large pot, heat the vegetable broth over medium heat. Add the carrots, celery, and mushrooms. Bring to a simmer.

    Stir in the soy sauce, ginger, and garlic. Let it simmer for about 10 minutes until the vegetables are tender. Add green onions just before serving.

Salad

    Make the Salad

    In a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber.

    Drizzle with olive oil and balsamic vinegar. Season with salt and pepper, then toss to combine.

White Rice

    Cook the Rice

    Rinse the white rice under cold water until the water runs clear.

    In a pot, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and cook for 18-20 minutes until the rice is tender. Fluff with a fork before serving.

Shumai/Gyoza or Japanese Spring Roll

    Prepare the Filling

    In a bowl, mix the ground pork, chopped green onions, soy sauce, sesame oil, salt, and pepper until well combined.

    Place a spoonful of filling in the center of each gyoza wrapper. Fold and pleat the wrapper to seal. Steam the gyoza for about 8-10 minutes until cooked through.
