1. Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and black pepper.
2. Setup Breading Station
Set up a breading station with three shallow dishes. Place flour in the first dish, beat the eggs in the second dish, and add panko breadcrumbs to the third dish.
3. Bread the Shrimp
Dredge each shrimp in flour, shaking off any excess. Dip into the beaten eggs, allowing the excess to drip off, then coat with panko breadcrumbs, pressing gently to adhere.
4. Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
5. Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown and cooked through.
6. Drain and Serve
Remove the fried shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with tonkatsu sauce and lemon wedges.
