Prepare the Chicken
Start by flattening the chicken breasts using a meat mallet to about 1/2 inch thickness. Season both sides with salt and black pepper.

Setup Breading Station
Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and panko breadcrumbs in the third.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip into the beaten eggs, and then coat with panko breadcrumbs, pressing to adhere.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Chicken
Carefully place the breaded chicken cutlets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the katsu chicken with tonkatsu sauce drizzled on top and lemon wedges on the side.
