    Prepare the Ingredients

    Peel and devein the shrimp if not already done. Grate the fresh ginger and mince the garlic. Slice the onion and chop the green onions.

    Cook the Onions

    In a large skillet, heat the sesame oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Remove from skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant. Add the shrimp to the skillet, and pour in the soy sauce. Cook until the shrimp turn pink and opaque, about 3-4 minutes.

    Combine and Serve

    Return the sautéed onions to the skillet with the shrimp. Add salt and black pepper to taste. Stir to combine everything well. Serve the ginger shrimp on a bed of the cooked onions, and garnish with chopped green onions. Optionally, serve over rice or noodles.
