Method

Cooking Shrimp Tempura

    Prepare Tempura Batter

    In a mixing bowl, combine flour and cornstarch. Gradually add ice-cold water and mix until just combined. Do not overmix.

    Fry Shrimp

    Heat vegetable oil in a deep pan to 350°F (175°C). Dip shrimp in the batter and gently place them in the hot oil.

    Drain Shrimp

    Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Preparing Miso Soup

    Make Miso Broth

    In a pot, bring dashi stock (or water) to a boil. Reduce heat and whisk in miso paste until dissolved.

    Add Tofu and Onions

    Add cubed tofu and sliced green onions. Simmer for 5 minutes.

Cooking Rice

    Cook Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to manufacturer's instructions.

Making California Roll

    Prepare Nori Sheet

    Place a nori sheet on a bamboo mat. Spread a layer of sushi rice over the nori, leaving a small edge.

    Assemble Roll

    Layer cucumber, avocado, and crab meat on top of the rice. Roll tightly and slice into bite-sized pieces.

Preparing Sashimi

    Slice Fish

    Slice sashimi-grade fish into thin pieces using a sharp knife. Arrange on a plate.

Making Shumai or Gyoza

    Prepare Filling

    In a bowl, mix ground pork or chicken, green onions, soy sauce, and ginger. Place a spoonful of filling in each wrapper and fold.

    Steam Dumplings

    Steam shumai or gyoza for 8-10 minutes until cooked through.
