Preparation
Prepare the Meatloaf
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground chuck, chopped onions, green peppers, bread crumbs, beaten egg, ketchup, Worcestershire sauce, salt, black pepper, and garlic powder. Mix until well combined.
Shape and Bake
Transfer the meat mixture into a loaf pan or shape it into a loaf on a baking sheet. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
Make the Glaze
In a small bowl, mix together 1/4 cup ketchup with 2 tbs brown sugar. After the meatloaf has baked for about 45 minutes, spread the glaze evenly over the top and bake for an additional 15 minutes.
Assemble the Sandwich
Let the meatloaf cool slightly before slicing. Spread a generous amount of mashed potatoes on your choice of bread, top with slices of meatloaf, and serve.
