Method
Coffee Cake Directions
Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
Cream Butter and Sugar
In another bowl, cream together the softened butter and granulated sugar until light and fluffy. This will take about 3-4 minutes.
Add Eggs and Vanilla
Beat in the eggs, one at a time, then stir in the vanilla extract.
Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
Prepare Topping
In a small bowl, mix together the brown sugar and chopped nuts (if using).
Layer and Bake
Pour half of the batter into the prepared baking pan. Sprinkle half of the topping mixture over the batter. Pour the remaining batter on top and finish with the remaining topping mixture. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
