Herb-Crusted Salmon

1. Prepare the Salmon

Preheat your oven to 400°F (200°C).

2. In a small bowl, combine the chopped parsley, dill, minced garlic, olive oil, salt, and black pepper to create a herb mixture.

3. Place the salmon fillets on a baking sheet lined with parchment paper. Spread the herb mixture evenly over the top of each fillet.

4. Sprinkle bread crumbs and grated Parmesan cheese on top of the herb mixture on each fillet.

5. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.

Seasonal Vegetables

6. Prepare the Vegetables

While the salmon is baking, prepare the seasonal vegetables.

7. In a large bowl, toss the asparagus, sliced carrots, and bell pepper with olive oil, salt, and black pepper.

8. Spread the vegetables on a separate baking sheet and place them in the oven for the last 10 minutes of the salmon's baking time.

Lemon Butter Sauce

9. Make the Lemon Butter Sauce

In a small saucepan over medium heat, melt the butter.

10. Add the minced garlic and cook for 1 minute, stirring frequently.

11. Stir in the fresh lemon juice and chopped parsley. Season with salt and black pepper to taste.

12. Remove from heat and set aside until ready to serve.
