Method
Preparing the Squash
- 1
Roasting the Squash
Preheat your oven to 400°F (200°C). Cut the honeynut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and season with salt and black pepper. Place cut-side down on a baking sheet and roast for 25-30 minutes until tender.
Making the Agrodolce
- 2
Prepare the Agrodolce Sauce
In a saucepan, combine the brown sugar, apple cider vinegar, whiskey, and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let simmer for about 10-15 minutes until it thickens slightly.
Making the Streusel
- 3
Prepare the Caraway Streusel
In a mixing bowl, combine the flour, butter, sugar, and caraway seeds. Use your fingers or a pastry cutter to mix until crumbly. Spread on a baking sheet and toast in the oven for the last 10 minutes of the squash roasting time, until golden brown.
Assembly
- 4
Assemble the Dish
Once the squash is roasted, place it on a serving dish. Spoon the whiskey-brown sugar agrodolce over the squash and top with torn pieces of burrata and a sprinkle of caraway streusel.
