Ice Cream Base

Prepare the Ice Cream Base
In a saucepan, combine heavy cream, whole milk, granulated sugar, and vanilla extract over medium heat. Stir until sugar dissolves.

Cook the Mixture
Continue to cook the mixture over medium heat, stirring constantly until it thickens enough to coat the back of a spoon. Do not let it boil.

Cool and Churn
Remove from heat and let cool. Once cooled, pour into an ice cream maker and churn according to manufacturer instructions.
Creme Anglaise

Combine Ingredients
In a saucepan, combine heavy cream, granulated sugar, and split vanilla bean (seeds scraped out) over medium heat. Heat until just below boiling.

Cook the Cream
Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon. Strain through a sieve and cool.
Whipped Cream

Whip the Cream
In a bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to overwhip.
