Method

Schnitzel Preparation

    Prepare the Chicken

    Pound the organic chicken breasts to about 1/2 inch thickness. Season with salt and pepper.

    Breading Process

    Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip into eggs, and coat with breadcrumbs.

    Frying

    In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

Cucumber-Dill Salad Preparation

    Mix the Salad

    In a bowl, combine the sliced cucumber, chopped dill, Greek yogurt, lemon juice, salt, and pepper. Toss until well mixed and refrigerate until ready to serve.

House Pickle Preparation

    Pickling Cucumbers

    In a saucepan, combine white vinegar, water, sugar, salt, and crushed garlic. Bring to a boil, then pour over sliced cucumbers in a jar. Allow to cool, then refrigerate for at least 1 hour.

Sandwich Assembly

    Assemble the Sandwich

    On a brioche bun, place the fried schnitzel, top with cucumber-dill salad, and add house pickles. Serve with a side of pommes frites.
