Method

Burger Preparation

  1. 1

    Prepare the Beef Blend

Grind the hanger steak and brisket together using a meat grinder. Season the meat with salt and black pepper.

  2. 2

    Form the Patties

Divide the meat mixture into 4 equal portions and form into patties. Make a slight indentation in the center of each patty.

  3. 3

    Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium rare. Add a slice of farmhouse cheddar on each patty during the last minute of cooking to melt.

  4. 4

    Assemble the Burger

Place each cooked patty on a brioche bun and top with onion jam. Close the burger with the other half of the bun.

Pommes Frites Preparation

  1. 5

    Prepare the Potatoes

Peel and cut the russet potatoes into thin strips. Rinse under cold water and pat dry with paper towels.

  2. 6

    Heat the Oil

In a large pot, heat the vegetable oil to 350°F (175°C).

  3. 7

    Fry the Potatoes

Carefully add the cut potatoes to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels.

  4. 8

    Season the Frites

While still hot, sprinkle with salt to taste.
