Burger Preparation

Prepare the Beef Blend
Grind the hanger steak and brisket together using a meat grinder. Season the meat with salt and black pepper.

Form the Patties
Divide the meat mixture into 4 equal portions and form into patties. Make a slight indentation in the center of each patty.

Assemble the Burger
Place each cooked patty on a brioche bun and top with onion jam. Close the burger with the other half of the bun.
Pommes Frites Preparation

Prepare the Potatoes
Peel and cut the russet potatoes into thin strips. Rinse under cold water and pat dry with paper towels.

Heat the Oil
In a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels.

Season the Frites
While still hot, sprinkle with salt to taste.
