    Prepare the Pork

    Preheat your oven to 400°F (200°C). Season the pork tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat, and sear the pork on all sides until golden brown, about 3-4 minutes per side.

    Roast the Pork

    Add minced garlic and thyme to the skillet, then transfer the skillet to the preheated oven. Roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest for 5-10 minutes before slicing.

Peppercorn Sauce

    Make the Sauce

    In the same skillet used for the pork, add chopped shallot and crushed black peppercorns. Sauté for 2-3 minutes until fragrant. Add beef stock and Worcestershire sauce, stirring to combine. Bring to a simmer and reduce by half.

    Finish the Sauce

    Stir in the heavy cream and simmer for another 2-3 minutes until the sauce thickens. Taste and adjust seasoning if necessary.

Vegetable Rice

    Cook the Rice

    In a saucepan, heat olive oil over medium heat. Add chopped onion, diced carrot, and bell pepper, sautéing until softened, about 5 minutes. Stir in the rice and cook for 2 additional minutes.

    Simmer the Rice

    Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender. Add peas in the last 5 minutes of cooking.
