Preparing the Fries

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drying the Potatoes

    Drain and pat the potatoes dry with a clean towel.

    Heating the Oil

    In a large pot, heat vegetable oil to 350°F (175°C).

    Frying the Potatoes

    Fry the potatoes in batches for about 4-6 minutes or until golden brown. Remove and drain on paper towels. Sprinkle with salt.

Making the House Ketchup

    Combine Ingredients

    In a medium bowl, mix together tomato paste, apple cider vinegar, brown sugar, onion powder, garlic powder, salt, and black pepper until smooth.

Making the Dijonnaise

    Mix the Sauces

    In a small bowl, combine mayonnaise and Dijon mustard. Stir until well blended.
