Preparation of Pommes Frites

Cut the Potatoes
Peel the russet potatoes and cut them into thin strips, about 1/4 inch wide.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean towel.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potatoes in batches for about 4-5 minutes until they are golden brown. Remove and drain on paper towels.

Season
Immediately season with salt to taste.
Preparation of House Ketchup

Combine Ingredients
In a bowl, mix together tomato paste, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper until smooth.

Adjust Seasoning
Taste and adjust seasoning as needed.
Preparation of Dijonnaise

Mix Ingredients
In a small bowl, combine Dijon mustard and mayonnaise until well blended.
