Method

Prepare Spaetzle

    Make the Dough

    In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg until a smooth batter forms.

    Cook the Spaetzle

    Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander, press the dough into the boiling water. Cook for 2-3 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Roast Portobello Mushrooms

    Prepare the Mushrooms

    Preheat the oven to 400°F (200°C). Clean the Portobello mushrooms and remove stems. In a bowl, mix olive oil, minced garlic, balsamic vinegar, and thyme. Brush the mixture onto the mushrooms.

    Roast the Mushrooms

    Place the mushrooms on a baking sheet and roast for 20 minutes, until tender.

Sauté Mustard Greens

    Cook the Greens

    In a skillet, heat olive oil over medium heat. Add mustard greens and sauté for 5-7 minutes. Add lemon juice and salt, and stir to combine.

Prepare White Yams

    Cook the Yams

    Peel and cube the white yams. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter and salt to taste.

Assembly

    Combine Ingredients

    In a large serving bowl, combine the cooked spaetzle, sautéed mustard greens, roasted Portobello mushrooms, and mashed white yams. Top with grated farmhouse cheddar cheese before serving.
