Preparation of Ingredients

Prepare the Tomatoes
Wash the heirloom tomatoes and slice them into wedges. Set aside.

Make Whipped Farmer’s Cheese
In a bowl, whip the farmer’s cheese until creamy. Add a pinch of salt and mix well.

Cucumber Vinaigrette
Peel and dice the cucumber. In a blender, combine Thai basil, cucumber, red wine vinegar, salt, and pepper. Blend until smooth.
Assemble the Salad

Combine Ingredients
On a serving plate, arrange the tomato wedges. Drizzle with tomato seed oil and the Thai basil-cucumber vinaigrette.

Add Whipped Cheese and Croutons
Dollop the whipped farmer’s cheese on top and scatter the sourdough croutons over the salad.

Cook the Chicken
Season the chicken breast with salt and pepper. In a pan, heat olive oil over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side. Slice and add to the salad if desired.
