Whole Nova Scotia Lobster Recipe

Lobster and Sauce

Method

Preparation of Lobster

    Cook the Lobster

    Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes until bright red. Remove and set aside.

    Prepare the Butter Poach

    In a saucepan, melt the butter over low heat. Add the cooked lobster tails and claws, and poach for 5-7 minutes until heated through. Remove and keep warm.

Vegetable Preparation

    Caramelize Fennel

    Slice the fennel bulb thinly. In the same pan, add olive oil and cook the fennel over medium heat until caramelized, about 10 minutes.

    Prepare Runner Beans and Tomatoes

    Blanch the runner beans in boiling water for 2-3 minutes. Drain and set aside. In a baking dish, add cherry tomatoes, drizzle with olive oil, season with salt and pepper, and roast at 375°F (190°C) for 20 minutes.

Sauce Preparation

    Make the Reduction

    In a saucepan, combine white wine, roasted cherry tomatoes, and smoked paprika. Simmer until reduced by half, about 10 minutes.

Assembly

    Plate the Dish

    On a platter, arrange the poached lobster, caramelized fennel, blanched runner beans, piquillo peppers, and black olives. Drizzle with the lobster white wine tomato reduction. Serve warm.
