Method

Prepare the Crust

Make the Crust

In a mixing bowl, combine flour, sugar, and salt. Cut in the butter and cream cheese until the mixture resembles coarse crumbs. Stir in vanilla. Press into a tart pan and chill for 30 minutes.

Bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for 20 minutes or until golden. Let it cool.

Make Blueberry Compote

Cook Blueberries

In a saucepan, combine blueberries, sugar, lemon juice, and water. Cook over medium heat until the blueberries burst and the mixture thickens, about 10 minutes. Set aside to cool.

Prepare Lemon Curd

Make Lemon Curd

In a saucepan, whisk together sugar, eggs, lemon juice, and zest. Cook over low heat, stirring constantly until it thickens. Remove from heat and stir in butter until smooth. Cool before using.

Make Blueberry Sorbet

Blend and Freeze

Blend blueberries, sugar, lemon juice, and water until smooth. Pour into a container and freeze for at least 4 hours or until firm. Stir occasionally.

Assemble the Tart

Assemble the Dessert

Spread lemon curd on the cooled crust, top with blueberry compote, and serve with a scoop of blueberry sorbet.
