Cooking the Pasta

Cook the Fettucine

In a large pot of boiling salted water, cook the fettucine according to package instructions until al dente. Drain and set aside.

Infuse with Peppercorns

Crush the black peppercorns slightly and add them to the pot with the drained pasta. Toss to combine.

Cooking the Beef and Mushrooms

Sear the Beef

In a skillet, heat olive oil over medium-high heat. Season the beef tenderloin with salt and sear on all sides until browned. Remove from skillet and let rest.

Sauté the Mushrooms

In the same skillet, add oyster mushrooms and sauté until golden and tender. Remove from heat.

Making the Cream Sauce

Prepare the Sauce

In the same skillet, add diced shallot and minced garlic, sautéing until fragrant. Add Madeira wine and let it reduce by half. Stir in heavy cream and ground black pepper, simmering until thickened.

Assembling the Dish

Combine Ingredients

Slice the rested beef tenderloin and combine it with the sautéed mushrooms and cream sauce. Toss with the fettucine.

Prepare the Topping

In a bowl, mix the grated Gruyère cheese, bread crumbs, pine nuts, and melted butter.

Bake

Transfer the pasta mixture to a baking dish, sprinkle the bread crumb topping evenly over the top, and bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
