Filet Mignon

Sear the Steaks

Heat olive oil in a skillet over medium-high heat. Season the filet mignon with salt and black pepper. Sear the steaks for about 4-5 minutes on each side, or until they reach desired doneness. Add butter to the pan during the last minute of cooking for extra flavor.

Whipped Potatoes

Prepare the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and heavy cream, then mash until smooth and creamy. Season with salt to taste.

Green Beans

Sauté the Green Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add green beans, season with salt and black pepper, and cook for about 5-7 minutes until tender-crisp.

Mixed Mushrooms

Cook the Mushrooms

In the same skillet, melt butter over medium heat. Add mixed mushrooms, thyme, salt, and black pepper. Sauté for about 5-7 minutes until mushrooms are tender and browned.

Red Wine Jus

Make the Jus

In the skillet used for the steaks, add minced shallots and sauté until translucent. Pour in red wine and beef stock, bringing to a simmer. Reduce heat and let simmer until thickened, about 10 minutes. Whisk in butter and season with salt and black pepper.
