Method

Piperade

    Prepare the Piperade

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced red and yellow bell peppers and sauté until softened, about 5 minutes. Add minced garlic and continue to cook for an additional 2 minutes.

    Add Zucchini

    Stir in diced zucchini and cook until tender, about 3-4 minutes. Season with salt and pepper to taste, then remove from heat.

Rapini

    Sauté the Rapini

    In a separate pot, bring water to a boil. Blanch the rapini for 2 minutes, then drain and immediately transfer to an ice bath to stop the cooking. Once cooled, squeeze out excess water and chop.

    Finish the Rapini

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped rapini and sauté for 3-4 minutes until wilted. Season with salt and pepper.

Pistou & Salsa Verde

    Prepare the Cherry Tomato Pistou

    In a blender, combine cherry tomatoes, 1 tablespoon of olive oil, half of the basil, and salt. Blend until smooth and set aside.

    Prepare the Salsa Verde

    In a separate bowl, mix remaining basil, parsley, garlic, and 2 tablespoons of olive oil. Chop finely to create the salsa verde.

Assembly

    Assemble the Dish

    On a plate, spread a layer of piperade, top with wilted rapini, and drizzle with cherry tomato pistou and salsa verde. Garnish with finely chopped preserved lemon.

    Serve

    Finish with a drizzle of fine olive oil and serve warm.
