Winemaking Process

    Harvesting the Grapes

    Harvest the Sauvignon Blanc grapes when they reach optimal ripeness, usually in late March or early April in Marlborough, NZ.

    Crushing and Pressing

    Crush the harvested grapes to extract the juice and separate the skins. Press the juice to obtain clear must.

    Fermentation

    Add the yeast to the must and allow it to ferment in a controlled temperature environment (about 15-18°C) for 2-3 weeks.

    Adding Sulfur Dioxide

    After fermentation, add sulfur dioxide to stabilize the wine and prevent unwanted bacterial growth.

    Malolactic Fermentation (Optional)

    If desired, introduce malolactic bacteria to convert malic acid to lactic acid for a creamier texture.

    Aging

    Age the wine for several months in stainless steel tanks or with oak chips for additional flavors.

    Bottling

    Once aged, filter the wine and bottle it. Seal with corks and store in a cool, dark place.
