Wine Making Process

Grape Preparation
Harvest the Xarel·lo, Macabeo, and Parellada grapes. Crush and destem the grapes to extract the juice.

Primary Fermentation
Transfer the grape juice into fermentation tanks and add yeast. Allow it to ferment for about 10-14 days at controlled temperatures.

Blending
Once primary fermentation is complete, blend the different varietals in the desired proportions to create a harmonious base wine.

Secondary Fermentation
Add sugar and yeast to the blended wine, then bottle it and seal with a crown cap. Allow for secondary fermentation to occur in the bottle for 9 months.

Riddling
After secondary fermentation, place the bottles on riddling racks and gradually turn them upside down to collect sediment in the neck.

Disgorgement
Freeze the neck of the bottle to remove the sediment plug, then top off with a mixture of wine and sugar before sealing with cork.

Aging
Age the bottles for at least another 12 months to develop the flavors and complexity.
